Welcome to The Belfry's Kitchens! We are a diverse and dynamic team of over 50 chefs, working across five different kitchens to deliver exceptional cuisine and dining experiences to our guests.
We have the Ryder Restaurant, our flagship restaurant that has earned 2 AA rosettes for its outstanding a la carte menu. The Ryder Restaurant also serves up to 700 breakfasts, lunches and dinners a day with a fantastic hot and cold buffet offering for our hotel guests and conference delegates. Our team of skilled chefs are passionate about using fresh, seasonal ingredients to create innovative and delicious dishes that delight our guests.
We have a further four other food outlets, each with its own unique focus. Sam's Bar & Kitchen offers high-volume, classic pub-style dining, while Rocca's is our Mediterranean restaurant, catering to couples and spa guests. The Brabazon Bar serves handcrafted afternoon teas created by our talented pastry chefs. The Pastry Kitchen is a small but perfectly formed kitchen that produces desserts, pastries, cakes and sweet treats for the whole resort.
In addition to our restaurants, we have a large banqueting kitchen team. The Banqueting team are part of making so many people’s big days special – delivering hundreds of corporate lunches and dinners, meals for celebrities at award events, and catering for weddings and parties, our banqueting chefs ensure events are seamless and memorable.

In the Sam's kitchen team, you will work on a four days out of seven,, allowing you to balance work and personal life effectively. We understand that working in the hospitality industry can be demanding, which is why we have partnered with The Burnt Chef Project and Thrive to further support our chef’s wellbeing.
Our Ryder Grill kitchen team work 5 straight shifts per week coving the evening service, so no early mornings. Holding 2 Rosettes has provided the chefs in the Ryder Grill the opportunity to be innovative and get involved in menu development. In our other kitchens, the shift pattern is variable, working 5 out of 7 days. If you are keen to learn and progress we also have the opportunity to complete a fully funded apprenticeship programme to further your skills and knowledge.

I have been at The Belfry for over 6 years now when I started as a Chef de Partie. After 1 year, I was promoted to Junior Sous Chef, and in 2022, I was then promoted to Sous Chef. My favourite thing about working at The Belfry is that through any challenges, we are a family. Even when it’s really busy, we always get lots of support from the Executive Chef and from my Head Chef.
I have been working at the Belfry for 25 years and came straight from school. Originally, I wanted to join the police cadets, but as the funding was cancelled the same year, I had to find something different. I started as Kitchen Porter and applied for an apprenticeship as Chef at the hotel at the same time. After the 2-year course I worked my way up all the ranks and different Kitchens.
