Hotel Chef of the Year 2018, Hotel Cateys
At the helm of The Belfry’s culinary excellence stands Robert Bates, a chef whose career spans some of the world’s most prestigious kitchens. With a wealth of experience behind him, having honed his skills in Michelin-starred restaurants across the UK and Europe, he was appointed Executive Head Chef at The Belfry in 2013.
Robert’s journey began in 2004 at the esteemed Château De Montreuil in France, setting the stage for an illustrious career that has seen him rise through the ranks at the legendary Le Gavroche in London, and the Restaurant Joël Robuchon, a two Michelin-starred eatery in Monte Carlo.
Sharpening his expertise further with tenures at the world-renowned École Lenôtre in Paris, and Scotland’s acclaimed Inverlochy Castle, Robert then spent five years as a Consultant Chef to the celebrated Albert Roux at Chez Roux Limited. Leading the kitchen at The Greywalls Hotel & Chez Roux, his culinary artistry earned the establishment the coveted title of ‘Best Hotel Restaurant of the Year’ at the Scottish Hotel Awards.
Enhancing his experience at renowned establishments like Slaley Hall, Savill Court and Hotel Metropole, Robert was the perfect choice to lead The Belfry’s kitchens. His impact at the resort has been transformative. Under his premiership, the team has achieved an outstanding 5-star food hygiene rating and fostered a culture of empowerment and excellence, leading to record-high team morale and retention. In 2018, Robert’s talent and leadership were recognised with the prestigious Hotel Catey’s ‘Hotel Chef of the Year’ award - a testament to his dedication to delivering unparalleled dining experiences.
A master of his craft with an impressive global repertoire, Dean Cole has built a distinguished career working alongside some of the world’s most acclaimed chefs.
Specialising in patisserie, Dean’s expertise and artistry have earned him a well-deserved reputation for excellence. While his journey began in Birmingham, his passion for perfection soon led him to the Michelin-starred Connaught Hotel in Mayfair, London, and the iconic Sharrow Bay Country House Hotel in the Lake District.
Further refining his skills in a truly world-class setting, Dean’s career then took an international turn. Bringing his talents to Canada, he served as Pastry Chef at the prestigious Relais & Châteaux Langdon Hall and at the Splendido Bar & Grill. Setting new standards for fine dining, he was key to launching Toronto’s, The Rosewater Supper Club.
A decorated chef, Dean earned the distinguished Académie Culinaire de France Award, and was a proud member of Team Canada’s World Banquet Team for several years, showcasing his expertise on a global stage.
